Avocado Toast with pro tips for wrestling those little black nuggets from their case

Avocado Toast is so satisfying. 
There are endless variations, but the key is getting ripe avocados.  If they're hard, game over.  Then, you've just got toast. 

Vegan Avocado Toast

This version of avocado toast is simple to prepare and uses easy to source ingredients.

Serves 1-2, (depends upon how hungry you are, and I won't lie to you, this is delicious...)

Ingredients:
4 slices vegan bread (any type)
1 avocado, halved and pitted
2 tbs. chopped cilantro*
1/2 lemon juiced
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. onion powder
1/2 tsp. garlic powder

1. Scoop avocado into bowl.  Check out our Pro Tips for the easiest ways to get the avocado out.
2. Mash with fork.  (You can use a potato masher, but that's one extra thing to wash.)
3. Add spices and mash away.  This is some fun mixing.  Like a mad science experiment, but you can eat it.
4. Goes without saying, but smoosh the stuff onto the toast and enjoy.  Garnish with some extra cilantro.


* Parsley can also be substituted in place of cilantro, but avocados and cilantro are destined to be together.  Fresh cilantro is easy to find at the larger farm stands.
As a breakfast food,
avocado toast is delicious on Trader Joe's vegan bagels.

Turn it into a sandwich and it's a decadent meal-to-go.
This bagel sandwich is topped with spring lettuce mix.
Not recommended for eating in the car, though...

You hit the avocado lottery with this one.
It's perfect!
Just the right ratio of avocado to pit and fully ripe..
Just one problem, how do you get the avocado out of the skin?



Make tiny slices with your knife across and then across again.

Lightly squeeze the avocado into a bowl and it is ready to mash into avocado toast.
So easy it practically mashes itself!
