The "Quick Soak" Method of Cooking Beans

The idea behind soaking beans overnight is that it makes them faster to cook.  Also, soaking the beans breaks down some of the complex sugars that make beans hard for some people to digest.

However, if you are in a hurry, there's good news.


You can skip the overnight soaking.

Yes, skip it.

Rinse those beans in a bit of cold water and get to cooking.

In a large pot, cover beans by 3 inches with cold water, cover and bring to a boil. Boil for 1 minute, remove pot from heat and set aside, covered, for 1 hour.

Is there the possibility these beans could prove to be a bit more of "a magical fruit" than your overnight soaked beans?

Mmmm.... maybe. 

My family eats legumes and/or lentils daily.   We have no digestive difficulties.  We did start off slowly at the beginning of our vegan journey and built up our tolerance.  The Standard American Diet (SAD) is low in fiber.  A vegan diet is high in fiber.

Many folks can't digest beans because they aren't used to eating them.  


The simple answer?  Eat more beans.  They're a great source of protein, and dried beans cost just pennies per serving.  The more you eat, the less likely you are to have tummy trouble.
