Toasted Quinoa / Quinoa Taco Meat


Toasted Quinoa

This recipe originally comes from the Minimalist Baker who calls it "Quinoa Taco Meat."  It is amazing for rolling in a tortilla, but also works great for throwing atop a salad.  Very versatile.  


This "toasted quinoa," also known in the vegan world as "quinoa taco meat,"
 is so flavorful it is hard to stop eating it.


Ingredients


QUINOA
  • 1 cup cooked quinoa, any type
SEASONINGS
  • 1/2 cup salsa 
  • 1 Tbsp nutritional yeast
  • 2 tsp ground cumin
  • 2 tsp ground chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp each sea salt and black pepper
Instructions
  1. Preheat oven to 375 degrees F (190 C).
  2. Add cooked quinoa to a large mixing bowl and add remaining ingredients (salsa, nutritional yeast, cumin, chili powder, garlic powder, salt, pepper, and oil). Toss to combine. 
  3. Spread on a lightly greased (or parchment-lined) baking sheet.  I use a Silicone baking mat to avoid using oil.  
  4. Bake for 20-35 minutes, stirring/tossing once at the halfway point to ensure even baking. The quinoa is done when it's fragrant and golden brown. Be careful not to burn!
  5. We love this on fresh corn tortillas or a huge healthy salad.
  6. Keeps for four days in the fridge.
